Last night’s dinner
The pork was lovely and moist and I decided to serve it on a bed of pasta with a nice mushroom sauce (just tomato based with lots of fresh bella mushrooms and dried chanterelles).
I do have leftover pork though and need to take care of that in short order so…
Tonight’s dinner
Sweet and Sour Pork
Ingredients:
•1 1/2 pounds pork (I’m using my leftovers that are already cooked)
•1 can (20 ounces) pineapple chunks in juice (I’ve got a fresh one in the house from last week’s organic bin so I will just use it. I cut it up the night before and got a lot of juice out of it.)
•3/4 cup water
•1/4 cup vinegar
•1 tablespoon soy sauce
•1/4 cup brown sugar
•1/2 teaspoon salt
Throw all of this into the slowcooker and let it burble away for a min. of 7 hours (you can get the sauce ingredients ready to go the night before in the slowcooker and just throw in the pineappler and pork on your way out of the door)
After you come home:
•2 tablespoons cornstarch
•2 tablespoons water
Mix in a small bowl and add to the slowcooker.
•1/2 cup thinly sliced onion
•1 green pepper, cut in thin strips
Add and let cook for another hour (or until thickened).
Serve with rice.
