The marinade taste was all through the meat and the salad pairing made for a perfect summer meal.
Tonight’s dinner
We’re going to have fajitas tonight and this means making tortillas. I made the mistake of making tortillas one time when I was out of them and too lazy to go to the store. We got a taste for them pretty quickly and now can’t stand the store-bought ones.
This is more of a method than a recipe. Take flour and a healthy pinch of salt. Add enough water to make a thick dough. Turn out onto a floured surface and knead until smooth and elastic, cover with a bowl and let rest for 20 min.
Cut into 2×2 chunks, pull into a disk and then roll thin with a rolling pin. Meanwhile have a frypan heating, when almost smoking, lay the tortilla in the pan. When it bubbles, flip (I just use my fingers). Repeat and let cool on a tea towel.
Expect your smoke alarm to go off-it’s just part of the fun.
In the fridge I have steak marinating in; lime juice, garlic, cumin and chili powder.
We’ll have this with lots of chopped onion, peppers, salsa and wedges of lime.
