I’m going to cheat tonight and post for tomorrow now. I am off to the farm tomorrow and hope to get some yardwork done before I go.

Last night’s dinner

The brining gave the pork a lovely tender texture and the maple taste was great all the way through. I am presently doing a chicken like this and so I’ll see what it is like tomorrow. This wasn’t really like the Gastropub but it was good. I need to somehow get a bit of apple taste added. Maybe apple cider vinegar?

Tonight’s dinner

Was reading VegNews and happened upon a great recipe for a cereal bar that tastes like a PinaColada. Sign me up!

Lightly grease a 9×13 inch baking pan. In a large bowl combine; 6 cups rice cereal, 3 cups unsweetened, shredded coconute and 1 1/2 cups of finely chopped, dried pineapple.

In a medium saucepan and on medium heat combine; 1 cup light agave syrup, 3/4 cup sugar, 1 T. coconut oil. Bring to a boil and cook for five minutes. Add vanilla. Take off of heat and pour over rice cereal. Mix and quickly pour into greased pan. Press down and let cool completely before cutting.

Note: this will be like molten lava when it is first turned into the pan so be very careful not to touch.
