Last night’s dinner

The pork was terrific and I just put green beans on the top of the roast for the last half an hour and we were set to go.

Dessert ended-up being another recipe from Jamie Oliver’s book-Sarah’s Torta.

In a bowl mix 4 eggs with 1 T. of yeast and 1 cup of melted butter. Add; zest of one lemon and the juice. Beat in 2 cups of sugar and then 3 1/2 cups of flour.

Pour into a springform pan(9 inch) and top with 1 cup of pine nuts (you could really do this with any nut or even dried fruit). Bake at 330 for approx. 20 or until a knife comes out clean. Serve with a bit of fresh fruit.

Tonight’s dinner is in Toronto with my sister but I am bringing an appetizer for my mom’s 70th birthday. I’m just taking a piece of french stick, spreading on a bit of goat cheese, layering on prosciutto and then a chunk of fresh fig. Finally I will be drizzling it with honey and fresh cracked pepper. Yum.
