Well, what a difference a few days, a FABULOUS shopping trip, lunch with a dear friend and a new hairdo will accomplish. I’m back to myself, the house is clean, marking is up-to-date, the baby is happy and the basement is well on its way to getting turned into a temporary space for Peter.

We have also (almost) hashed-out what the addition to the house will look like and my Christmas shopping even has a very large dent made in it. Now, I just need to finish making our way through the fridge full of food that has to be managed before we waste anything.

I did make some rather nice sticky buns yesterday that are almost gone.

All you do for these is; make the basic pizza dough recipe that I’ve listed previously but add about 1/4 cup of white sugar and a dash of cinnamon to it. After it goes through it’s first rise, roll it out to about 1/2 and inch thick. Spread with butter, brown sugar and cinnamon. Roll length wise and slice into 1 inch pieces. Place in a 9X11 pan that has been buttered and has 1/4 inch of maple syrup in it and let rise until nearly double. Bake until the rolls are no longer dough when poked apart with a knife (350 for approx. 20 min).

We also feasted on some Greek Chicken (recipe already given) on flat bread with salad and hummous.

The rest of the week is going to include;

Asian Tuna Cakes
2 cans tuna, drained
1/2 cup whole wheat bread crumbs
1/2 cup grated carrot
1 TBSP each – grated fresh ginger, soy sauce, ketchup, diced cilantro
1 TSP sesame seed oil
1 egg
1/4 TSP salt and pepper
Canola Oil and nob of butter

Mix all ingredients except for canola oil and butter in a bowl. Press mixture into 6 patties.

Heat oil and butter in a large skillet until butter has melted and pan is nice and hot. Add patties and fry until crispy on the outside and warmed all the way through. Serve warm with salad, rice or side dish of your choice.

Feel free to make substitutions – finely diced red pepper in addition to or instead of carrot is lovely!
