To meat or not to meat-that is the question…

Talking to some folks in the staffroom today we came around to the topic of chilli. A request went out for a tomatoless chilli that didn’t have 10 000 ingredients and I think that I’ve found a winner. This is tonight’s dinner.

The recipe apparently dates back to the ’40’s and it is supposed to be great on hot dogs etc. We’ll have it tonight with a big salad but I’ll freeze some for another night too.

Ingredients
1 pound ground beef
1 1/2 cups all-purpose flour, divided
1 1/3 cups beef broth
1 quart water
3 tablespoons chili powder
2 tablespoons finely grated carrot
1 tablespoon white vinegar
2 teaspoons dried minced onion
2 teaspoons salt
1 teaspoon granulated sugar
1 teaspoon paprika
1/4 teaspoon garlic powder
Directions
1.Place the beef in a large, deep skillet over medium heat, and cook until evenly brown. Transfer beef to a strainer over a saucepan, and allow grease to drain for about 5 minutes. Mix any drippings remaining in skillet into the saucepan. There should be about 1/2 cup drippings. Return beef to skillet.
2.Heat the beef drippings in the saucepan over medium heat, and gradually mix in 1/4 cup flour. Reduce heat to low, and continue cooking 10 minutes, stirring continuously, to form a golden brown roux. Pour in the beef broth, and remove from heat.
3.Pour the water into the skillet with the beef, and mix in remaining flour. Stir in the roux mixture, chili powder, carrot, vinegar, onion, salt, sugar, paprika, and garlic powder. Bring to a boil, reduce heat to medium-low, and continue cooking 15 minutes, until thickened. When it’s done cooking, take the chili off the heat, cover it, and let it sit for 30 minutes before using it on burgers, etc. It should thicken to a tasty brown paste as it sits.

I also found a veg version that sounds just as good. Maybe this will be for tonight-I’ll decide on the way home. I like both of these recipes as I have everything in the house for each.

Killer Tomato-less Chili

2 tablespoons olive oil
1 medium onion, chopped
4 cloves garlic, minced
2 carrots, cut into chunks (cut into quarters lengthwise then into 1/4 inch pieces)
1 red bell pepper, chopped
2 tablespoons red wine vinegar
1 can kidney beans
1 can black beans
1/2 cup bulgur wheat
2 cups water
1 tablespoon cumin
1/2 teaspoon cayenne
1 teaspoon chili powder
1 teaspoon smoked paprika
salt to taste

Heat olive oil in a large pot over medium-high heat. Add onion, garlic, carrots, and bell pepper. Cook until onion is almost translucent and carrots are slightly tender, about five minutes. Add remaining ingredients and bring to a boil. Reduce heat to medium. Simmer uncovered for 20 to 25 minutes, until chili is thickened and bulgur is cooked through. Serve hot, topped with grated cheese and crumbled cornbread.

Well, what a difference a few days, a FABULOUS shopping trip, lunch with a dear friend and a new hairdo will accomplish. I’m back to myself, the house is clean, marking is up-to-date, the baby is happy and the basement is well on its way to getting turned into a temporary space for Peter.

We have also (almost) hashed-out what the addition to the house will look like and my Christmas shopping even has a very large dent made in it. Now, I just need to finish making our way through the fridge full of food that has to be managed before we waste anything.

I did make some rather nice sticky buns yesterday that are almost gone.

All you do for these is; make the basic pizza dough recipe that I’ve listed previously but add about 1/4 cup of white sugar and a dash of cinnamon to it. After it goes through it’s first rise, roll it out to about 1/2 and inch thick. Spread with butter, brown sugar and cinnamon. Roll length wise and slice into 1 inch pieces. Place in a 9X11 pan that has been buttered and has 1/4 inch of maple syrup in it and let rise until nearly double. Bake until the rolls are no longer dough when poked apart with a knife (350 for approx. 20 min).

We also feasted on some Greek Chicken (recipe already given) on flat bread with salad and hummous.

The rest of the week is going to include;

Asian Tuna Cakes
2 cans tuna, drained
1/2 cup whole wheat bread crumbs
1/2 cup grated carrot
1 TBSP each – grated fresh ginger, soy sauce, ketchup, diced cilantro
1 TSP sesame seed oil
1 egg
1/4 TSP salt and pepper
Canola Oil and nob of butter

Mix all ingredients except for canola oil and butter in a bowl. Press mixture into 6 patties.

Heat oil and butter in a large skillet until butter has melted and pan is nice and hot. Add patties and fry until crispy on the outside and warmed all the way through. Serve warm with salad, rice or side dish of your choice.

Feel free to make substitutions – finely diced red pepper in addition to or instead of carrot is lovely!

2) Hmmm…not sure what else but I’ll update when I have figured it out.

Well, this week is nutty busy but I just don’t seem to have the drive to get a lot done and as a result there has been extra blogging. I have gotten a lot of units written for my classes for the coming months (I love doing this) but I have marking waiting and if I just went at it for an hour I would be done but…I’ve been blue.

I’ve been really blue which is not like me. I’ve been so blue that I’m almost weepy blue which is REALLY not like me and I figured-out why last night on the way home from work.

I was deciding what to have for dinner when I realized I needed something totally comforting.

I needed; homemade tomato soup and grilled cheese sandwiches. I also realized that the reason why I was rushing towards this meal is because I miss my mom.

I just saw her last weekend but she isn’t really her anymore. She’s this bizarre woman who says rude things to strangers (like that they are fat and shouldn’t finish their meals in restaurants-cringe), that has needs that have to be “dealt” with and be taken care of instead of hanging-out with and enjoying her granddaughter.

Geez. That really sounds whiney but looking back now each time I’ve seen her for the past year I’m am really off for about a week. Perhaps now that I’ve identified what is going on I can make it better.

So. Tomato soup, grilled cheese sandwiches and some wine it was.

Tomato soup
Melt 1/4 cup of butter in a medium saucepan. Add; a small onion chopped and sweat (let cook without getting any colour). Add 1/4 cup of flour and cook for a minute (this lets the raw flour taste get cooked out). Add enough milk to make a thin white sauce (add a bit of milk at a time so as to avoid lumps and the sauce should coat the back of a spoon). Add salt and pepper, a can (one of the big ones) of diced tomatoes, dill to taste, a dash of worstershire and chili flakes to taste. Blitz with a hand blender or put it in the blender to the consistency you like (I like it super smooth-my sister likes it chunky).

You can make this soup with broccolli too and it is just as good.

I was just reading “After the Harvest” and found out about the Ottawa Foodie Challenge that is happening this weekend to benefit the Ottawa Food Bank. This is like a big scavenger hunt for adults (No. It isn’t naughty-get your mind out of the gutter.) with tonnes of great food.
