I can’t think of this as anything other than a rub. It creates a gorgeous crust all over the ham. Do yourself a favour and don’t clean the pot when the ham is finished. I’ll be posting a recipe tomorrow that uses the same pot and all of these seasonings in it.
Take: 1/2 cup brown sugar, 3 T. mustard powder, 3 T. apricot jam, 4 T. fennel seeds, 2 T. oil.
Rub onto ham (mine’s still frozen)
Bake at 350 for 2 hours or until crunchy crust is formed on the top and when a knife is poked into the thickest point the blade comes out hot. I saved myself a step in dinner prep and threw some small potatoes in with the ham. Sliced tomatoes and you have a lovely dinner.
