Who can ever say no to a really yummy crisp?  This is my “go to” dessert when we don’t really have anything in the house and I’m thinking that I might not have the baking gods on my side.  You cannot mess this up.  It doesn’t need to rise or have you worry about it spreading out too much or flopping at the end. 

It’s like you best pair of jeans or that dress that you take out of your closet each time you are in a jam.  OR even better, it’s the pair of pj’s that you wear on a Friday night while you eat popcorn and watch Agatha Christie on DVD.

In this case I used apples but you can use ANY fruit according to what you have in the house and what is in season.  I like things pretty tart so I just sprinkle the fruit with a tiny bit of sugar.  If you have berries you will also want to sprinkle them with a couple of tablespoons of cornstarch to help make a tasty syrup.
In the crumble mix there is 1/2 cup butter, 3/4 cup brown sugar, 1/2 cup flour, 1 tsp. cinnamon and 2 cups of oats. Mix until it JUST resembles crumbs.

I used 6 apples sprinkled with 1/3 cup white sugar and a pinch of cinnamon.
Pat the crumbs mixture on the top.

Bake for thirty minutes at 350 or until the fruit is soft.  Serve with icecream, whipped cream or a LOT of custard (cheat and use the Bird’s mix).
