It is officially summer and thanks to all that offered support yesterday. It was touch-and-go there for a bit 🙂 I went to sleep at 7:30 with the baby. Once again-things have changed somewhat in the past few years.
How did I do this week?
1) a little bit of salad (leftover from a party and that never keeps does it?)
2) a pot of oatmeal (when will I learn? Do not leave the pot on the stove and leave the room!)
3) a lemon (it wouldn’t be a week in our house if I didn’t have a squishy piece of citrus)
Hey. That’s it. But better be proactive now.
I’ve been reading out there in blogland about a rather brilliant idea and so last week when I had seven frozen bananas fall out of my freezer and onto my feet (insert favourite, curse word here) I was urged into action.
I’m not sure who came up with it first but they were very clever. I went super simple and used just two ingredients (see below).
You can add honey, vanilla, cinnamon…whatever your heart desires but this version was spectacular.
Pry bananas (saved from certain death already with the freezer-sort of like Walt Disney in the cryogenic freeze) out of their skins and add 1/2 can of coconut milk. Whizzz!
Freeze in a plastic container and voila! This is fab and considering it was made with bananas that were saved from the compost bin it was an almost free dessert.
Those are two words that you don’t normally get to hear together. 🙂
I just got back from a long, hot walk with a miserable girl and an almost-miserable boy.It was miserable. (Happy Canada Day!)And right now, all I want is some Walt Disney Cryogenic Freezer Banana and Coconut Ice Cream.I've got my best imagination hat on today.
Ack! Do I hear the cal of the nap coming on?I KNEW you would 'get' the Walt Disney reference 🙂
Miss asked to go to bed when we walked in the door at eleven-thirty. I'm feeding Jr a half-ass lunch of bananas, kiwis & water, and then we're both heading to nap land too.I had great ideas of what I wanted to accomplish with my extra day off (Mr's at a too-rare baseball game with a friend), and now my list reads:Have a nap. Enjoy it.So I will. I'm pretty excited about it, to tell the truth. I KNOW you understand!
That sounds like a great lunch. Haven't thought that far-still bloody packing.I'm excited about both the cottage AND the nap that I have planned for the car ride. Hopefully 'someone' doesn't do her usual puking in the car.
Oooooh, I like it!! I'm always up for ideas about over ripe bananas!! And this looks especially yummy!Sarahx
