I have a bunch of odd ingredients around right now that on their own you can’t really do much with but put together will make a really wonderful dinner.

This type of strata is really like a savoury, bread pudding.  I’ve put another strata on my blog previously but this one is specifically for leftovers and hopefully the pictures are a bit better.

I’m going to just call it Fridge Strata because the contents of the fridge are being dropped in.  Vary the ingredients according to your taste and what you have hanging about.  Just the method stays the same.

Butter a casserole dish (isn’t this starting well already?) and place a layer of bread.  Dot with a bit more butter and then a layer of cheese (I’m using grated cheddar but you could really have anything here) and a handful of whatever vegetables and choppped meat you want to use (I’ve got chopped basil, mushrooms and a bit of leftover salami for this one).

Repeat layers (ending with cheese).
In a bowl beat 7 eggs (for this size) and add enough milk to obtain a vanilla custard colour.  I am actually being totally frugal and using milk that is almost past it’s prime but when cooked will taste great.
Pour over your bread layers.

At this point you can leave the mixture to sit overnight in the fridge or let it rest on the counter for around 30 minutes to let the egg soak into the bread.

Bake at 350 degrees until firm and puffy.
We’re having ours with a big spinach salad.
