I love Italian food, so it is really hard to pick just one. Probably eggplant parmesan. 🙂

All good choices. It's hard to narrow down.
You know, Italian isn't something I make frequently. With a gluten intolerance, I tend to steer clear, which is such a shame as there is a world of possibilities out there. When I'm going to cheat and suffer the consquences, nothing beats a good pizza margarita, just some fresh basil and tomato sauce and some cheese. Yum.

Mmmmm… BBQed pizza dough as a sandwich holder, with prosciutto, arugula, goat cheese, parmesan, lemon juice and olive oil… Or, a good tomato sauce with eggs poached in it, lots of cheese melted on top, with only fresh bread as a utensil…. Even better when you have only one bowl for two to share. Hard to decide between the two. This book looks like a riot. Fantastic, thanks for hosting this giveaway.
I love any ravioli that doesn't have meat in it! Portabella mushroom or just cheese…yummy!

I simply cannot narrow it down–I cook Italian several nights a week. Since it has been such a hot summer I have been cooking lighter meals and many with orzo. Another light summer fav would be prosciutto & smoked mozzarella paninis–so good!Cheers! VB
