Bouyed by my success with beef bourginon burgers (by success I mean the multitude of mmmm…mmmmm…noises while they were being devoured) I decided to try something a little different. Instead of classic souvlaki on a stick, how about in a burger form?

I thought of all the flavours that I love in souvlaki and got to assembly.  I figure that the key to making these really taste like souvlaki will be to let the meat sit with all the seasonings for at least an hour in the fridge. 

I’ve got; the zest and juice of a lemon, a lb. of ground pork (you could easily use chicken here), 1/3 cup of bread crumbs, 2 T. of really rich olive oil, 2 T. fresh chopped oregano (you could easily use 2 tsp. of dried), 2 big cloves of garlic (crushed), 1 egg, 2 T. of finely chopped onion and salt and pepper to taste.

Let them get to now each other for awhile in the fridge andform into burgers.

Get some nice thin buns ready and smear with tsatsiki (recipe to come tomorrow-freakishly easy to make).

Eat, eat, eat…yummm…making slurping sounds while eating-it adds to the experience.
