If you are a facebook liker (I think I’m making words up here) then you saw that the baby’s room has the first bit of paint on it. Our builder stayed REALLY late and painted after a full day of putting in windows.
I’m still struggling with the mess though. I’m one of those people that likes things REALLY clean, like you can smell the cleaning products clean.
I need some ice cream.
Here’s my stream of thought in getting me some dairy-free ice cream.
I was out with some friends for lunch the other day and one of our number is going to have a wee one by the new year so while the rest of us had red wine spritzers-she chose a virgin Pina Colada. I immediately regretted my own choice.
She (I’m not saying her name because I don’t know if the word is out to the world about the bambino) is one of those people that has an uncanny ability to always order the right thing. I’ve seen her come up with a combination in a sandwich that you think will never work and it is the most delicioius thing that you’ve ever eaten. She is also the only person who has ever made me tuna salad that I love (not just like-not just choke down because it would be rude not to). Normally I think it is much like cat food.
When we go out I usually just have her order for me.
WHAT was I thinking by not doing that this time?
I blame it on the sun, we were on a patio-bad move.
I’ve thought about that frosty, tasty drink ever since and have decided to turn it into icecream (you see, I’m on track again now).
I’ve made coconut icecream in the past (icecream fun day) and figure that I can adapt that tried and true recipe to incorporate the all important, pineapple element.
Take; 1 can of coconut milk, 1/3 cup of sugar and 2/3 cup crushed pineapple. Whiz in the blender until smooth and add a dash of rum extract. Chill the mixture overnight if you can (that’s what I’m doing thus my sort of weird photos. If you can’t wait a whole night, then an hour in the fridge will still do nicely.
I’ve got child labour around so out comes our fancy pants ball/icecream maker
and 20 minutes later I’ll be making my pina colada dreams come true 🙂
Note: I’ve posted a quickie i-phone picture on facebook of the finished product. Yummmm…I’m not sure if there will be any left for dinner.
That's usually me. At a restaurant, I tend to always order the food that Mr. Locavore lusts after and after one bite, immediately regrets his choice of not listening to my suggestions.

Yup, it's my husband! The thing is, when we're discussing what we're going to order before the server comes, he for some reason has always decided first and tells me before I've decided. That used to make me choose something else since I wanted us to be able to try more than one thing. Now, almost always, I just say, "Sounds good! That's what I'll have too!"
