A lot of bloggers this week are talking about going back to school.  I’ve got a little bit of time before I need to be back in my classroom (a week) but I still start pondering all that studying to come.  My mom used to make my sister and I caramel corn during exams each year.  My sister studied a lot more than I did but I did enjoy the caramel corn a lot.

Don’t wait for exam time.  Have this now, have it often.  You can add nuts or chunks of chocolate but tonight I’m lucky enough to have my Godson over and nuts are a no-go for this great guy.  Pokemon movies are teed-up, mini sliders are ready to grill and this should round-out a terrific evening.

10 cups of popped corn (I like to go old school and do this in oil)

Mix in pan and boil until candy thermometer reaches 300 degrees F.
1 1/2 cups granulated white sugar
1/2 cup packed dark brown sugar
1/2 cup light corn syrup
1/2 cup water

Take off the heat and add:
2 tablespoons butter
2 teaspoons kosher salt (this is a new addition of mine due to my addiction to salt-the kosher stuff melts really well)
2 teaspoons baking soda (watch-out, the baking soda makes this whole thing bubble up which is totally cool but also more than a bit dangerous)
Mix quickly into the popcorn.  You can form this into balls but honestly, we just eat it out of the bowl.

Devour with good company but try to wait long enough that it doesn’t burn a hole straight through your hand.
