I’ve been avoiding being home a lot this week (ie staying away from my construction site) by looking for a big girl bed for my kiddo.  This means a few stops for “nacks” as my little one says and one place that we went to had beautiful looking vegan chocolate brownies. 

They were so pretty but at SIX DOLLARS  a piece they were not coming home with me.  I’m sure they are wonderful but they would need to be dipped in gold and fortell the lottery numbers before I take them home at SIX DOLLARS.  They did have me desperate for brownies and I didn’t have any eggs in the house-vegan it is!

I started with a recipe from this cool vegan baking site and adapted it to fit what I wanted the texture to be (you know that amazing crunchy bit on the top of a good brownie) and what I had in the house.

3 Tablespoons water
2 Tablespoons golden flax meal (who has this?  I had flax seeds and ground them in my coffee grinder)
Mix together and they form a sort of gloop.

1 ¾ cups all-purpose flour
¼ teaspoon baking soda

7 T. cocoa powder
3 ounce dark chocolate, chopped
1 T. finely ground coffee
1 cup dried cherries

Mix so that all that cherry and chocolate goodness doesn’t sink to the bottom.

Add:
1/2 cup boiling water

1 ½ cups sugar
6 Tablespoons margarine, melted (not tub margarine)
1 ½ teaspoons vanilla extract

Pour into a buttered 9×9 pan. 

Bake for approx. 30 minutes (remember you are going for crust on the top but squidgey in the middle).

Enjoy outside with an iced, soy latte and a little girl that loves playing with her water table and the neighbours.
