Today is the first day of school and I’ve got my regular jitters.  I want my new ‘kids’ to start off well.  I want to hopefully inspire them to find a love for reading if they haven’t already, to write something they are proud of, to be their true selves, to know they can count on me… 
No pressure, right?
By the time I get home tonight I will have talked more in one day than I have the entire summer.  I’m going to want something tasty and I’m going to want zero mess at the end of dinner. 
I can live with one, possible two pans and a couple of plates to go in the dishwasher. 
Shepherd’s pie it is.  I’m going to make really traditional pie with ground lamb but if you aren’t a fan then use ground beef.
  I’ve got one chopped onion to saute in a dollop of oil.  Once the onions soften add 1 large clove of garlic.  Add; 1 lb. ground lamb and cook through.

Meanwhile boil six potatoes until soft.   Drain and then put back on the burner to get all of the water off of them.  Add salt and pepper, 2 T. horseradish, 1 T. butter and enough milk to make make a creamy mash..

To your onions add; 2 chopped carrots, 1 cup chopped green beans (or add peas), 1/4 cup beef broth, dash worstershire sauce and 2 tsp. chopped fresh oregano (half this if using dried).  Sprinkle with flour and stir-this makes a yummy gravy.

Top with your lovely potatoes and bake 45 minutes in a moderate oven (330).

A bit of salad and hp sauce and that is dinner.  Ummm…maybe a glass of wine-inspiring is thirsty work.
