There are some foods that once they have their time in the sun they really need to never see the light of day again-ummmm think of 1980’s food drenched in coulis.
However there are some foods that have a strong underground following and deserve their time in the sun again.
Devilled eggs are one such food 🙂
Think of every great potluck that you’ve been to-someone will bring devilled eggs. There will be a few snickers and giggles when that person walks in with their paprika sprinkled delights but they are also the first plate to be emptied.
Here’s a ‘foodie’ version that is just plain, great food.
Boil a dozen eggs for exactly 11 minutes and then cool them under the tap to stop the cooking.
Slice them in half.
Now here is the fun part. Mix the egg yolks with 2 T. of wasabi powder, a dash of salt and 3/4 of a cup of your luscious homemade mayonaise

You know…..you're so right…..everyone snickers when I say I will make or bring deviled eggs, but my plate is always empty….who's snickering now?
