Last week Mama Kat’s writing prompt had me thinking about hoarding potentials. I, of course, said books and made a thinly veiled reference to shoes but it had me thinking of other obsessions.
You see, I love dishes. I blame thank my tiny Irish grandmother who unbelievably had 10 sets of good china when she passed away and happyily used all of it all the time.
I tend to go more to the practical or REALLY big wine glasses which has led me to classic pyrex. I have a few of these pieces and was thrilled to find another at a flea market for $5.00. It’s hard not to yank something off of a table and say “My precious” when you really should be bartering when you are faced with a dish like this.
I was especially thrilled since it meant I had a handy carrier to take these mini cheesecakes to a party the other day.
These are quick cheesecakes that don’t even need to bake.
Simply take 1 cup of soft goat’s cheese (don’t like that-use cream cheese), 1/4 cup of honey, zest and juice of a lime and mix.
Meanwhile take two cups of graham crumbs, 1/2 cup sugar and 1/2 cup melted butter. Mix.
Press into silicone cupcake molds if you want to serve them as stand alones or…
Press into pretty glasses.
Then back to your fluffy cheese mixture. Add 1 1/2 cup berries (I used frozen blueberries but you could add anything)
Fold in 2 cups of whipped cream-mixing as little as possible.
Spoon into your prepared cups.
Eat right away if you aren’t unmolding them or if you are wanting a really pretty dessert chill for several hours.
Wow, those look amazing! I might just have to make them (except with cream cheese) for a baby shower I was asked to bring something to. I never know what to make for gatherings (especially fancier ones)- thanks for some inspiration!
Mmmm…that looks so yummy! And you're not alone with the dish obsession! Hubby was QUITE embarrassed over all the dishes our movers had to pack for us when we moved to this house…hahaha!!
Cheesecake from goat cheese? I so need to try that and that handy carrier I love…yes,I do have a little dish obsession as well.
More dishes, like more shoes are always a good idea :). I really like the tang of goat's cheese in this Recipe but if you want something smoother cream cheese would be the way to go.
These look so good and I think even I could make them. :o) I love pyrex too. I have several pieces of the old clear kind…casseroles and bowls mostly. I'd love one like yours…the "pleated" sides, square and a lid. I'm on the look-out now!
