I was looking for a new, chocolate chip cookie recipe for this month’s challenge at “Mom’s” and found what I think is the most brilliant thing I’ve come across in a long time.

I’m stretching the definition of a chocolate chip but I think that when you see them you’ll be happy I did.

I was lucky enough to find this amazing site bakedperfection who offers some pretty brilliant ideas.  She even suggested using bought sugar cookie dough to make these an “emergency” cookie recipe.  I made mine from scratch but I am far from too proud to say that that will happen each time.  Sometimes cutting corners just makes life easier and happier.

The choice is up to you but here’s my Gran’s recipe for sugar cookies.
Cream together: 2 c butter, 3 cups sugar, dash vanilla,

Add: 2 eggs, (child labour is a good thing)

5 1/2 cups flour 2 tsp baking soda and 1 tsp baking powder
 

At this point I put half the dough into a ziploc bag and froze it.  Cook once-eat treats twice is the motto in our house.

Roll into small balls and poke an indentation in with your finger.

Bake for approx. 10 minutes (or until they are starting to brown) and while still hot, add your mini peanut butter cup.

They look lovely alone BUT even better…

in a crowd.  Note:  some I poked chunks of dark chocolate in just because.
