What do you love about lasagne?
The cheese, the layers, a rich sauce?
My family like the crunchy corners-does yours?
How about a lasagne that takes almost no time and is all crunchy, corner goodness?
I cheated and didn’t make noodles so I’ve got a package (six sheets) of lasagne.
Cut six inch X six inch squares of parchment paper for your muffin tin cups.
Slice the noodles lengthwise.
Lay onto your counter and layer a nice meaty (or leave out the meat if you’d like) sauce, then ricotta (2 cups mixed with 1 cup of cooked spinach and a dash of nutmeg) and finally a layer of shredded mozzarella.
Roll them up.
Place in your muffin tins.
Ladle on 2 T. tomato sauce over the top.
Top with more cheese.
Bake for 30 minutes at 330 degrees.
No more fighting over who gets the corner.
