We had a potluck the other day at work and I volunteered to bring one of the desserts.  I was trying to think of something that wouldn’t require and extra plate, fork etc and butter tarts came to mind.  In our house there is only one butter tart-Grandma Gibson’s butter tarts.

Like everything else she made this is the ultimate in delicious-well, at least to us ๐Ÿ™‚

Imagine my shock horror when I realized that I’ve never shared it with all of you.  This miscarriage of justice can’t be allowed to continue.

I will warn you that your dentist will not be your friend and please don’t give him my blog address to complain.  Mind you, he/she should really thank me for increasing business in a sluggish economy.  That’s me-a giver.

Either make a batch of my super easy pastry or use premade shells.  This filling recipe will make 12 tarts that are muffin sized or 24 of the premade small ones.

Beat together like heck:  1 cup brown sugar, 2 T. flour, 2 eggs, 1 cup syrup, 2 T. melted butter, dash salt and 1 tsp. vanilla.

Pour into unbaked shells and cook at 330 for 12 minutes (or until the pastry is starting to brown).
