And my food waste this week? Nada, zero, zippo, nothing…you get the idea. I’m slightly excited. It doesn’t take much apparently. What better way to celebrate than with a lot of meat in the slowcooker?
I’m winging this since I’m trying to reproduce a dish that I had at an amazing restaurant called “Town”. If you’ve dreamt of a dish for more than six months then you better figure out how to make it.
Here’s my take on Coffee rubbed shortribs.
I’ve got my good old slowcooker out (which I have a feeling I’ve almost destroyed) and put a layer of chopped vegetables (2 onions and 3 carrots).
My regular kitchen assistant gets the spices ready. 1/2 cup finely ground coffee, 2 heaping T. really good cocoa and 1 tsp. chipotle.
Rub your chocolate/coffee mixture into beef, short ribs (mine are frozen, I usually start my meat off like this for the slowcooker and end-up with moist, tender dinners). I’ve got enough ribs here for 3 adults and a toddler for dinner and two lunches.
Top your vegetables with the meat (any extra rub can be thrown in too). I’ve also got 1/2 bottle of red wine (you could use beef broth) and 2 T. of balsamic (this is rich and the acid is neccessary).
Turn onto high for six hours. Three hours in and we have…
Six hours in and this is what you get. Ahhh…
Gaaaaaahhhhhh…that is the sound of drool dripping on my keyboard…I would never have thought of that combo, but it sounds HEAVENLY! Enjoy (c:
The ribs look really good. However, a word of caution. They recommend against starting with frozen meat in a slow cooker. While it is thawing and heating up is the perfect temperature for bacteria to grow.
Interesting, I've never heard that and I've been doing this for years.
Hmm…maybe I should finally invest in a slow cooker. The ribs look amazing! I also stopped by to let you know that I've nominated you for a "Liebster Blog Award" which is given to up-and-coming bloggers who have less than 200 followers. Check my blog for more info: http://nataschasstuff.blogspot.com/2011/11/liebster-blog-awardpass-it-on.htmlAll the best,Natascha
Heavenly!!!! I heard about using coffee for a rub, but never tried it…this is so going into my recipe file. Love ribs in slow cooker.
An award?! Thanks so much! I'll head over as soon as possible.
