And my food waste this week? Nada, zero, zippo, nothing…you get the idea. I’m slightly excited. It doesn’t take much apparently. What better way to celebrate than with a lot of meat in the slowcooker?
I’m winging this since I’m trying to reproduce a dish that I had at an amazing restaurant called “Town”. If you’ve dreamt of a dish for more than six months then you better figure out how to make it.
Here’s my take on Coffee rubbed shortribs.
I’ve got my good old slowcooker out (which I have a feeling I’ve almost destroyed) and put a layer of chopped vegetables (2 onions and 3 carrots).
My regular kitchen assistant gets the spices ready. 1/2 cup finely ground coffee, 2 heaping T. really good cocoa and 1 tsp. chipotle.
Rub your chocolate/coffee mixture into beef, short ribs (mine are frozen, I usually start my meat off like this for the slowcooker and end-up with moist, tender dinners). I’ve got enough ribs here for 3 adults and a toddler for dinner and two lunches.
Top your vegetables with the meat (any extra rub can be thrown in too). I’ve also got 1/2 bottle of red wine (you could use beef broth) and 2 T. of balsamic (this is rich and the acid is neccessary).
