My favourite lunch of the week is Saturday. Our family gets to do something together in the morning (go to the grocery store, go out to breakfast…). I start the mound of laundry, we putter. We don’t rush anywhere and we have something yummy but quick for lunch.
This is based on a recipe for tomato soup that my Grandma Gibson always made. I’ve tweaked and played and had posted it previously but I’m in a contemplative mood today and really want a yummy bowl of love so here is the Queen of Soups: Creamy Tomato.
I start with one chopped onion, 1/4 cup butter and 1 heaping tsp. of dried dill.
Once the onion is soft I add 1/4 cup flour and saute for a minute or two to get rid of the raw flour taste.
Slowly add in 3 1/2 cups of milk, whisking as you go.
Add in a pint of halved cherry tomatoes.
28 oz can of diced, canned tomatoes (juice and all).
Blitz with a hand blender.
Looks pretty great, doesn’t it?
Taste for seasonings. I always like to add; pepper, worstershire, salt and a shot of hot sauce.
Guild this lilly with a bit of chopped, fresh parsley (not necessary but still nice).
Make funny faces while you eat it.
Vote for getting on with Saturday and finishing our craft for the day before naptime.

I've only recently got into making my own soups. There's a fab recipe book called The Covent Garden Soup Book, or something like that! Anyway, it's FAB!! And I've cooked all sorts of yummies from it.
