This week has been a bit of a wash for me in the food waste department, my father-in-law went on a trip to Florida and I haven’t quite adjusted my cooking/shopping yet.  I’ll have to be creative this weekend if I don’t want to waste a scary amount of milk. 

I gave the fridge a deep clean and found a few not so welcome surprises in the back like; a very gross cucumber that I have NO recollection of getting, a portion of meatball soup and two blue (literally and figuratively) oranges.  I did save a lot of apples though due, in no small part to coming up with a new recipe.

It seems funny to think of this as a new recipe when they seem so old-fashioned and homey.  I used apples but you could use any fruit that you have extra of.  This is the type of dessert that you could make for a weekday dinner but still have very happy company. I love a nice square.  Quicker than cookies, cake or pie.

Apple Pie Squares

Mix together as you would a crumble top (not mushing but rubbing the ingredients together until just combined); 1 1/2 cups flour, 1 1/2 cups rolled oats, 11/2 cups brown sugar, 3/4 cups white sugar, 1 tsp cinnamon and 1 cup butter.

Place 2/3 of your mixture in a 5×9 pan and press down.

Top with three, thinly sliced apples.

Top with remaining crumb mixture.

Bake at 330 until the apples are cooked through (about 30 minutes).
Gone in about 10 minutes 🙂
