But this posting is not about my days as an angst-filled teen, it’s about getting cookies ready in a hurry.
My sister introduced me to cinnamon shortbread a few years ago. She had gotten them from an amazing restaurant and wanted me to taste them in hopes I would be able to reproduce the recipe.
After a few tries this is what I figured out. I especially love this recipe because these are slice and bake cookies that I can have in the freezer.
Someone arrives at the house without warning? Slice up a log and insta treat!
Start with 1/2 cup sugar and 1 tsp. cinnamon. Set aside.
Take 2 cups butter, 3/4 cups brown sugar, 1/2 cup white sugar and 3 tsp. cinnamon.
Cream together.
And add; 4 1/2 cups of flour.
Lay out a 2 1/2 foot sheet of parchment paper (you can use foil or cling film if you’d rather) and spread out 1/2 of your reserved cinnamon sugar. Form half of your dough into a log and roll in the sugar.
Roll your dough tightly up and throw it in the freezer.
When you want some delicious cookies simply
slice ( afat 1/4 inch) and bake at 350 until golden on the bottom (about 15 minutes).
The brown sugar lets these cookies be chewy and the sugar on the outside allows you to get a nice cinnamon crunch.
