It’s Thursday, which is of course, dinner wasteland at our house.
However, bouyed by my success with waffle iron, grilled cheese I decided to try something else out. I don’t know about you but if I don’t literally have lattkes swimming in oil, the fates on my side and burn myself at least three times I just end-up with greasy, hashbrowns.
So I thought, why not take advantage of the lovely, non-stick surface of my waffle iron. I will literally be able to cook these with no fat (not that I really care about that) and with almost no supervision.
Here’s how it went.
Take one medium potato and grate it. Squeeze out as much of the moisture as you can by placing it in a tea towel and twisting.
Grate in 1/4 tsp. of nutmeg and dash of both salt and pepper.
Place in heated iron.
The potatoes will magically, meld together.
Top with a few greens and some vinaigrette.
A bit of chicken (I roasted this one but why not use a rotisserie chicken from the grocery store?)
Pop-by tomorrow to see a wonderful breakfast using, you guessed it-the waffle iron.
