I’m trying to get my mini, stockpile of appetizers ready in the freezer built up and think that I’ve got a winner here.  I started with my pizza pullapart bread but I wanted something cleaner so that you could munch away at it without worrying about massive stains all over you.
I’ve come-up with meatball poppers, totally ripping off the name from those horrible but wonderful jalepeno poppers you have in a pub after a beverage or two has reduced your willpower.
I started with a pound of ground beef and added; 1 egg, 1/2 cup bread crumbs, 2 garlic cloves, 1 T. dried basil and a sprinkle of red chilli flakes.
I made a batch of pizza dough (you can easily skip this step and just get the dough from the grocery store).
Made the meat into balls (no bigger than 2 cm. in diameter) and cooked them all the way through.
Divided my dough into 36 pieces (the same amount that I had of meatballs), slightly flattened them and topped with a tsp. of marinara sauce.
Add a meatball.
Fold everything together and hide the ‘bum’ on the bottom of the pan.
Drizzle with olive oil.
Bake until the bottoms are browned (350 for approx. 20 minutes) and for fun serve on a pizza platter.
