On one of my usual mind wanders I started to think of a wedding that I’m going to be attending later this month, which, of course, led me to think of wedding food, most memorable wedding food and then a rather nightmarish day I had making 1000 portions of baked Alaska as an apprentice chef. I realised that I literally have not made baked Alaska since. Like over 20 years ago. Maybe it’s time to give it another go.
So I started with a recipe of my favourite chocolate cake that never lets me down. I simply made a 9 inch springform pan of the recipe and sliced that cake across the middle to give me two, 1 inch pieces. I then used a ramekin as a cookie cutter to make circles out of the cake.
Top with a scoop of vanilla icecream.
Make a recipe of meringue
and ‘ice’ your cake and icecream rounds.
Be generous-these are supposed to look VERY exciting.
Freeze for a minimum of 2 hours.
Toast in a preheated 400 degree oven until the meringue is browned (no more than 10 minutes) OR use a blowtorch.
Hmmm…that was way easier than I remember. We’ll need to have these again really soon.
