We’re having friends over tonight that we have been abe to catch-up with since before the holidays and I’m really looking forward to seeing them bt I have a few projects that I want to get done during naptime this week before I go back to work.
You see, now that the majority of the rooms are done being reno’d the ones that haven’t been touched are looking more than a bit worse for wear.  In particular my back door area is looking grim.  A few years ago I painted it a really dramatic almost burgundy colour and I’ve loved it.
However, it’s time for a change and moving all the reno materials has pretty much destroyed the paint job as it is.
So…naptime is all about painting, hanging some pictures and recovering the window seat.  I would put more effort into it but these stairs are going to be gone in the next few years when we expand the kitchen so a cheap facelift will do the trick for sure.
Which leads me to a dish that will babysit itself while I paint as if my life depended on it-mothers of small children, you know what I’m talking about when I say ‘naptime is often short’.
Mexican Pot Roast Tacos
I’ve got two small roasts of beef: 1 tsp. crushed chillis, 1 (32 oz) can of diced tomatoes, dash of worstershire, 1 heaping tsp. of dark cocoa powder, 2 T. cumin, 2 T. chilli powder.
Cook on high for 6.5 hours in the slowcooker and serve with:
very good friends, salsa, shredded cheese, rice spiked with chilli powder, stirfried peppers, guacamole, sourcream and homemade tortillas.
Happy eating 🙂  I’ll show you the results of my mini makeover in the next few days.
