I was pretty good at keeping food waste down this week but I still have to admit to: a portion of onion bhaji and a bowl of soup. Not bad but not perfect, welcome to my life 🙂
I’m putting the basement back together today and so dinner will need to be a slowcooker special. I want to try to recreate a stew that I had in an Ethiopean restaurant awhile ago. It is spicy but not overly, sweet and sour. Okey dokey, anyone of African descent, forgive my liberties right now but this is mighty tasty nonetheless.
I’ve got: 1/4 cup of rice vinegar, 1/4 cup brown sugar, 1 1/2 inches of ginger, 1 can diced tomatoes (32 oz.), 2 roasted red peppers, 1 med. onion, a handful of fresh mushrooms and the same of dried, 2 carrots and 2 stalks of celery.
I have 1 lb. of stewing beef and 3 large garlic cloves mashed.
1 star anise, 1 tsp. cumin, 1 cup of raisins, 1 tsp. allspice, 1 tsp. cinnamon, 1 tsp. crushed chilles and a small can of tomato paste.
I made a batch of yorkshire puddings and…
Topped it with my beef stew.
