Reading this blog regularly you will know that I am not the Queen of low calorie cooking. I tend to eat what I’m in the mood for and just watch my portions. Imagine my surprise the other night when I made a meal and realized that it might actually fall into the low calorie bracket. Don’t hold it against this great salad though, what it lacks in fat it more than makes up for in flavour.
I’ve taken a large head of romaine lettuce, washed and dried it. If you don’t give your lettuce a good dry then the dressing will just slide off of the leaves.
In another bowl whisk together; 3 REALLY mashed garlic cloves, 2 tsp. dijon mustard, 1 tsp. freshly ground pepper, 1 anchovy fillet (I know, I know, they are gross but trust me-you need the flavour) and the juice of one lemon.
Add in; 3/4 cup of freshly shaved parmesan.
Toss with your romaine.
Either eat as is or top with some nice roast chicken. You’ll end-up with a really brightly, flavoured caesar that doesn’t even make you feel guilty while you eat it.
That means icecream for dessert.

Hehe… I'm with you on all of this. The salad does look great, it looks like another way I can use up some anchovy paste I bought a tube of a while back.
YEARS of my life with low-quality, anchovy-less caesar salads WASTED…until that day in 2006 I had one that was out of this world good, and found out that I'd been missing out. On ANCHOVIES. Unbelievable, but oh, so tasty.

This is going to be my next salad dressing! I won't buy bottled dressings because they all give me a headache. This sounds delicious (with the possible exception of the anchovy…but I WILL add it.) π Thanks for posting this great recipe!
Those bottled ones can often be pretty awful. I like this especially since I am just a FREAK for anything lemon.
