Small one loves food. Hardly a surprise considering our household is obsessed every moment of the day with what it will be eating next. Her ultimate food (since she first started eating at all) is hummous. I know. Slightly bizarre but the heart wants what the heart wants.
We have literally eaten gallons of the stuff in the past 18 months. So much so that I am now sort of totally, desperate to have something different. I’ve been playing with some appetizer recipes for this weekend when we’ll have a bash for small one’s birthday.

I had some homemade ricotta and had an idea in my head to mix it with a bit of sweet and sour. I wanted bright flavours and I needed a spread that had zero peanuts and zero sesame in it.
Here’s what I’ve come up with:
Lemon Ricotta Hummous
In my food processor: 1 cup of ricotta, the peel of one lemon (no white bit, that’ll be bitter), 1/4 cup of parsley, four dried figs that have been soaked in hot water until plump (keep the water for later) and salt and pepper to taste.
Add 2 cups of chickpeas.
Whizz until smooth, adding enough of your reserved fig ‘juice’ to give you a hummous consistency.
Pita chips round things out.

Happy Birthday to your lil one! We'll be celebrating our daughters bday this week too! Although ours, sadly, will be "bash-free"…lol. At least for a couple weeks still anyhow. But she's been asking how many sleeps until she gets her cake…hilarious. Have fun celebrating!! : )

Ahhh…thanks.Small one's whole life right now is a party so I'm not sure if today has any really special meaning to her :-)I love this version of hummous, lot of protein and flavour but some of the bought ones are loaded with cheap fat to fill things out.
I have a friend who bakes chickpeas and garbanzo's. Take out of can, rinse, pat dry, cookie sheet at 350, sprinkle with whatever seasonings you want, thinking she baked it for 20 minutes or til crunchy. Think small one would like the crunchies? Deb in NE
