Might have to have a glass (or two) of vino to celebrate.
I was more than a bit worried when I saw these bad boys had been left out overnight after we had friends
but I put my thinking cap on and came up with a tasty dinner.
Savoury Bread Pudding.
You see, I’m a huge bread pudding fan and usually use stale bread for that purpose with lots of custard and maple syrup but I needed a main meal instead of a dessert.
Why not turn bread pudding into something savoury?
I guess you could call this a strata too but I sold it to my family as bread pudding.
I took half of my bread out (rock hard-it was) and layered on a handful of green beans, dots of chevre, pepper and leftover chicken.
Repeat with a second layer and top the whole thing with shredded cheddar (cheese makes everything better).
Then, I took 4 eggs and 2 1/2 cups of milk. Poured over the top and let everything soak together for 30 minutes. Bake until bubbly and firm (330 for 40 minutes) and…
