Thanks to Kristen who hosts the improv challenge and decided that this month’s ingredients would be lemon and sourcream. How could you have nicer flavours during the dark days of winter?
Just what the doctor ordered.
I thought of a bunch of different things I’d like to try but the idea that really stuck for me was putting a bit of a twist on one of favourite weekend breakfasts. I love having time on Saturday and Sunday to have a real breakfast. During the week we set the coffee maker and have muffins ready to grab on our way out the door but on the weekend we try to slowdown and have a chance to eat something real-together.
Small one has now started to ask for waffles-often.
Here’s a new version that will be on the weekend menu regularly.
This recipe feeds 2 hungry adults and a voracious toddler.
1 1/2 cups flour, 1 tsp. baking powder, 3 T. sugar, dash salt, zest of 1/2 a lemon.
Add: 2 eggs, 2 T. butter (melted) and 1 cup of sourcream (plain yogurt would be just as nice).
Now I’ve pulled out my decrepit waffle iron BUT you could easily use this batter for pancakes.
LOTS of syrup is also required.
