Do you ever make something out of necessity, have no hopes for it and it turns out to be magical?
That happened with this salad. I had intended it as a post of using-up leftovers and instead I’m adding it to my “make again soon” list.
I had run out of oatmeal one day and small one LOVES oatmeal in the morning. I thought I could be cagey and convince her that small quinoa was the same thing-silly mommy.
So…all this was leftover (umm yeah, I didn’t measure either so there is a lot).
What to do?
I took a pomegranate and halved it. To get the seeds out I placed the cut side on my palm and wacked the peel side with a big spoon. The seeds just fly out. Don’t be impressed, I saw Jamie Oliver do this and have been looking for an excuse ever since to try it.
I added one chopped apple
and dressed the whole thing with a vinaigrette made out of: 1/4 cup orange juice, 1 clove garlic (mashed), dash salt, 1 cube (one of those little frozen one or one T. of fresh) of cilantro and 1/4 cup of canola oil (I’ve been getting this great first pressed stuff. If you can’t find it use a nice fruity olive oil).
Small one and I did a little taste test and decided something crunchy was needed so 1/4 cup of pepitos (pumpkin seeds) were added.
Perfect! I grilled a bit of fish and we had a fabulous dinner.
I would make this salad with: larger quinoa, couscous, rice…maybe even a pasta.
