Alrighty, I’m taking the plunge and starting this party. 
Each week I’ll share something that I’ve done to help me avoid feeling the winter doldrums and I hope that you will share along with me 🙂
This week I decided that I would go out of my way to make ‘healthy’ muffins/breads so that I had a nice breakfast to look forward to each day.  A banana and a bit of yogurt along with a monster cup of coffee has really been a great start to my day.
I also figure I will save a staggering amount of money by having my breakfast ready and not picking something up on the way to work.
How about cake for breakfast?
3/4 cup sugar, 1 1/4 cup yogurt, zest of one lemon, 3 cups flour, 3/4 cup pineapple (chopped), 1 egg, 1 tsp baking powder and soda and 4 oz melted butter.  Mix until just combined.
Yep!  New tube pan found on clearance at homesense!
Bake for 30 minutes (or until knife comes away clean) at 330 degrees.
Realise that small one has turned into a copy monster 🙂
