Happy Saturday!
How is it happy Saturday?
Well, it’s breakfast at home day, there’s a fun contest going on here (see the sidebar) and well, it’s Saturday.
I created this recipe up the other day after seeing a birthday cake made out of chocolate pancakes on Pinterest. It looked great but so very sweet I knew after one bite we would have all been ‘done’.
These waffles (no waffle iron? just make them into pancakes) are light and chocolatey but not sickly sweet. We’re having them again. Very, very, soon.
This recipe feeds three hungry adults and a Small One who grows while you watch.
2 1/2 cup flour, 2 tsp baking powder, 1/2 tsp baking soda, 1/4 cup cocoa and 4 T sugar.
Add: 3 eggs, 1 1/2 cups milk, 4 oz. oil. Stir to just combine.
Place on heated iron (1/2 cup works with mine) and top with fresh raspberries. Frozen would work well too but we had these already.
Top with more raspberries and lots of maple syrup to serve. 🙂
