No waste this week! Actually this must be an eating week for the whole family because I had trouble keeping up with appetites. Alrighty then!
One of the ways that I avoided losing a bunch of chicken was through this fun recipe.
Torilla lasagne.
I made this up years and years ago but never bothered to really measure or write things down-until now.
Take a 9×11 baking dish. Brush lightly with oil (I know that it looks like a lot but the oil mixed with the tomato juice) and top with 1 cup salsa.
In a separate bowl combine; 2 cups ricotta, 2 cups chicken, 1/2 cup beans and 1 tsp cumin.
Top the tomatoes with tortillas.
Layer on the ricotta and chicken mix.
Sprinkle on 1/2 cup cheese (I’ve got a nice, sharp cheddar)
Add another layer of tortillas, 1 cup of salsa, chopped peppers and 1 cup of shredded cheese.
Bake 35 minutes at 350 degrees or until everything is bubbling and browned.
A little sloppy but not necessarily a bad thing.

Congratulations on no waste. Your tortilla lasagne looks good. I see that this could be a very adaptable recipe to take care of several leftovers.
