I need a really great muffin to start my day this week.
You see, today is the first day of Lent and I’ve decided to give up….coffee.
I love coffee.
I love coffee in a scary, six cups a day way.
I love coffee too much.
Bye coffee.
I worry about keeping my job and possibly my marriage together.
I think cake might help.
Hello, Pineapple Upside Down Muffins!
I started with 1 cup of crushed pineapple (drained but don’t get rid of the juice) and 1/3 cup brown sugar.
Divide between 18 muffins cups and dot with a little bit of butter on each.
Now that mixture is almost enough to make me happy but now for the muffins.
Cream together; 4 eggs, 6 oz. butter, 1 tsp. vanilla and 1 cup sugar.
Add; 2 cups flour and 2 tsp. baking powder.  Then 2/3 cup of reserved pineapple juice.
Stir until JUST combined.

Bake at 330 for 15-20 minutes or until a knife come out clean when inserted.
