I’m almost a week without coffee and to tell the truth-I’m getting desperate.
The only thing that I think will help me hang on is hiding one of my favourite desserts in a muffin format.
Caramel Apple Muffins
These are a little more fiddly than I would normally go for but I had the idea in my head and…needed to make space up there.
I buttered my muffin tins (thanks to all who noticed my fun new pans in a previous post, I love these things and decided not to put them away after Valentine’s Day) and lined them with thin slices of apple (I had Red Ladies but any would work).  Sprinkle with brown sugar.
I creamed together 1 1/2 cups of chopped apples with 6 oz. butter and 3/4 cup brown sugar.
I then added; 2/3 cup yogurt (plain), 3/4 cup brown sugar, 1 tsp. cinnamon, 1 1/2 tsp baking powder, 4 eggs and 2 cups of flour.
Bake until firm (350 for 15 minutes). 
Yes, that is tea.
Still tea.
