I found a mouthwatering photo in Donna Hay’s magazine and new that this was ‘the one’.
I purposely didn’t look at the recipe as I want to have some fun on my own so here is my version of a:
Pancetta burger
Saute a small onion and 1 cup of chopped pancetta until the onion is soft and the pancetta has cooked and crisped. You could easily use regular bacon chopped and have a great burger too.
Add to: 1 lb. ground beef, 1/2 cup panko, 1 egg and salt and pepper.
Form into 4 patties and grill.
Meanwhile make a tasty sauce. I’ve got 1/2 cup mayo, dash worstershire, 2 T. dijon and 1 T. dried tarragon.
Cut chunks of a really good cheddar.
Grab some lovely greens and give them a quick rinse.
Serve with some tasty pickles and give everything an extra dress of fresh cracked pepper.
