Alrighty, it is spring break and I’m home fulltime with small one which you think would mean lots of extra time but instead I have this freakishly long list of things that I would like to do and did I mention that the sump pump in our new basement failed so…there’s a mess.
About three inches of water mess.
How about a quick dinner that is yummy and leaves enough for lunch the next day?
Pizza Roll.
I made a quick pizza dough (you could easily buy the dough) out of 1 cup of warm water, 1 T. sugar, 1 T. dried basil and 2 tsp. yeast. Let bubble for five minutes and add 1 cup water, 2 T. oil and five cups of flour (you might need more-depending on the day and your flour. Have six cups ready just in case, you want a soft dough but not mushy).
Get your trusty helper to flatten the dough out.
Realistically this is easier without the two year old’s help.
Spread with tomato sauce and top with cheese.
Add sliced vegetables.
Roll up.
Place on a baking pan (I use my trusty silicone sheets but you can use parchemnt paper).
Bake 30 minutes (it may need up to 45 depending on the moisture in the air) at 350 degrees.
Serve with a bit of salad and some pepperoni.
