Have you been super, super lately?
Have you had lots of greens?
Did you pass-up having a big green beer on St. Patrick’s day?
Did you go for a long run or make that pilates class?
Well, throw it out the window and have a fabulous piece of pie.
Now that is what life is all about C:
I started with two pie shells (these are thin, if you are using a deep dish one then keep with the same amount of filling and cut the pieces SUPER small) and baked them blind (parchment paper and beans to keep the pastry from puffing up).
Chop 4 oz of chocolate (I like a really good dark chocolate for this since the rest of the recipe is really sweet).
Toast and chop 4 oz of almonds.
In a bowl mix: 2 eggs, 2/3 cup brown sugar, 1/2 cup maple syrup, 3 T. butter (melted) and 1 tsp. vanilla.
Pour into your baked shells.
Resist the urge to eat it without baking and put it in at 350 degrees for 25 minutes.
Aren’t you glad you waited?
How about a little whipped cream on the side?
And now BACK ON THAT TREADMILL! (ok, I’m actually nyst talking to myself)
