Another start to a week which means muffins are needed.
I admit I have an unhealthy relationship with peanut butter and banana.
In fact if you give me a loaf of bread, a jar of peanut butter and some bananas I could happily eat for a week.
Sprinkle brown sugar on the top and I will offer to marry you.
So how about a muffin that has all my fav flavours in it?
Peanut Butter and Banana Muffins (warning, these are super dense).
Take: 4 bananas (mashed), 2 eggs and 1/2 cup of peanut butter (I heat it in the microwave for a minute so it’s easier to stir in).
Add: 1/2 cup brown sugar, dash of cinnamon, 1 1/2 tsp. baking powder and…
you don’t need to add this but I had a bag of cocoa nibs that I haven’t found a use for. I added 1/3 of a cup and they gave a nice crunch to this dense muffin.
Bind everything together with 2 cups of flour and bake for 20 at 330 or until a knife comes out clean.
This recipe makes 6 VERY large muffins or 12 standard size ones.
