Isn’t it weird how some foods go in and out of favour?
Remember everything with cilantro in it?
How about when every place needed to have a weird meat burger?
What about tiramisu?
Do you remember when every restaurant, cafe and corner shop had something slopped into a container with the label ‘tiramisu’ on it?
How about something fresher and lighter but with the creaminess of the original?
Blackberry tiramisu:
I started by making a blackberry syrup: 4 cups of frozen blackberries, juice and zest of a lemon and 1/2 cup sugar boiled down to let the berries release all of their juice.
Place 1/2 of the syrup on the bottom of a 9×11 pan.
Add 2 T. strong coffee.
1 T. (optional) creme de cassis.
Add a layer of lady fingers. I bought these soft ones at the grocery store for even less than what I could have made them for.
Grate 1 square of dark chocolate over the top.
Whip 500 ml. of 35% cream, sweeten with 1/4 cup icing sugar, 1/2 cup ricotta cheese and another square of grated chocolate.
Actually, this looks like dessert on its own doesn’t it?
Layer half of the cream over the lady fingers.
Add more lady fingers and the rest of the blackberry syrup.
Top with the rest of the cream and more grated chocolate.
Let set in the fridge for a minimum of 1 hour.
Eat with lots of friends or keep for yourself to eat after a long day.
Maybe two portions would be a good idea C:
