With our dump of snow on Saturday night I found we were even more desperate for some summer food on Sunday night.
Wow! This is super tasty.
For our dinner, I jointed a whole chicken, cooked the pieces (skin side up) on a cookie sheet at 350 degrees until the skin sizzled and then put the sauce on. This cooked for 10 minutes, I turned the chicken over and added another coat of sauce. FAB and the leftovers were even better for lunches.
Here’s the sauce (don’t worry about the alcohol-this sauce reduces by half and the alcohol will be gone-I think that you could use apple cider or even dealcoholized beer if you really wanted to avoid it though)
In a pan boil until reduced by half (about 40 minutes): 1/2 cup of butter, 3/4 cup of rum, 3/4 cup ketchup, 1/2 cup orange juice, 1/3 cup honey, 1/4 cup lemon juice, 1 T. chopped garlic, 1/2 tsp salt, dash pepper, 2 tsp. paprika, 1 tsp chipotle.
