My love affair with sweet and savoury is by now well documented in this blog but I hadn’t yet made a cookie with chocolate and salt. Weird because this is my favourite chocolate bar by far.
I needed a treat to take a couple of places the other day and thought I should take the plunge though and was pretty happy with the results.
I made these into bars since I didn’t have the time to babysit pans of individuals and I think that this lazy solution is one that I’ll actually use again.
I used my basic chocolate chip cookie recipe (I think I originally got this off of the back of the chipits package) and adapted it to be a bit more hoity toity. I make a lot when I bake so this actually makes two 11×9 pans. Who can ever have enough amazing cookies? If you have more restraint than we do in my house-you can easily half the recipe.
First, cream together 2 cups of butter, 1 cup white sugar and 3 cups of brown sugar. My assistant, as you can see, like to use her hands.
Roughly chop 1 large (400 grams) dark chocolate bar.
Add 1 1/2 tsp coarse, sea salt and 4 eggs.
Add your chocolate, 6 cups flour, 2 tsp baking soda and 3 tsp baking powder.
Divide between your two pans.
Bake at 330 degrees until golden (about 15 minutes). Top with more coarse, sea salt and cut into bars while still warm.
