We moved the last of the things out of my father-in-law’s house this weekend and the family really rallied around.
My mom was down and she and I held down the fort with the kiddo (not an asset when moving heavy objects) and got a hearty lunch ready.
We also wanted to shop do a bunch of things in the morning while everyone was gone so the slowcooker was the best thing for the job.
My brother-in-law Dan (a retired police officer) is not a fan of vegetables so I figured a he-man type of dish would be the best treat and I even sneaked in some of the healthy stuff.
Simply take four cups of tomato sauce, 1 green pepper (chopped), 1 cup of mushrooms (chopped), 1 cup of wine, 2 tsp dried basil and 2 garlic cloves (chopped).
I’ve got 2 lbs. of ground beef to mix with 3/4 cup bread crumbs, 2 eggs, a dash of beef base, 2 garlic cloves and 2 tsp. of dried basil. Mix thoroughly.
Form into balls and drop into the sauce. What is REALLY great about this dish is that the meatballs poach in the sauce (5 hours on high-I take the lid off when it starts to bubble) so they don’t shrink and the flavour from the sauce goes all the way through. BEST of all, ten minutes of effort yields a really good meal for a big crowd. You could easily have this sauce over pasta instead but…
I put it on baguette chunks and shredded mozzarella cheese. The babes ate three meatballs all by herself. My little carnivore isn’t into the bread but I did manage to convince her that carrot sticks are not just vehicles for dip.
