“The Girls” this week are getting a cross between a sandwich and a salad. I found a great sandwich idea in Everyday magazine and know that it will be well loved. We only have a few more weeks before summer holidays so it is nice to try a few different things.
I’ll even make this for dinner tonight as I am still trying to keep the house cool, there is a late meeting after school AND a lot of laundry to put away. Realistically the babes will only eat the chicken (she’ll also like the dressing as a dip) but I’ll give her everything in hopes that one day this kiddo will suddenly eat a vegetable and a bit of bread.
Ingredients
1 tablespoon grated Parmesan cheese
2 tablespoons light mayonnaise
2 teaspoons freshly squeezed lemon juice
1 dash Worcestershire sauce
Salt and ground pepper
2 slices multigrain bread
2 or 3 leaves romaine lettuce
3 ounces thinly sliced smoked turkey
Directions
1.In a small bowl, combine Parmesan, mayonnaise, lemon juice, and Worcestershire; season with salt and pepper. Spread on both bread slices.
2.Break lettuce into large pieces; layer half on 1 slice of bread. Top with turkey, remaining lettuce, and bread.
